Description
Never disappointed, this roast is extremely tender and should ideally be dry roasted in a roasting pan. We have found that the most ideal method, is to pour water into the bottom of the roasting pan and have the roast sit on a rack or grate so that it is raised out of the water while allowing the steam to keep the roast moist. This roast can be cooked in the oven or on an outside grill. Please note that a Chuckeye Roast can be a little fatty. The fat however is easily avoided when slicing or cutting. Because it is such a tender cut, herbs and spices are easily absorbed into the meat.
